Ever had one of those days where you just want comfort food but can’t be bothered to put in a ton of effort? That was me last week. I had a busy day and was craving something warm and cheesy. But guess what? I totally forgot to preheat my oven. Yeah, I was that person!
Ingredients
1 cup uncooked rice.
2 cups broccoli florets.
2 cups vegetable broth.
1 cup shredded cheddar cheese.
1/2 cup milk.
1 teaspoon garlic powder.
1 teaspoon onion powder.
Salt and pepper to taste.
How to Make It
In a large pan, combine the uncooked rice, broccoli, vegetable broth, garlic powder, onion powder, salt, and pepper.
Bring to a boil, then reduce heat and cover. Cook for about 15 minutes, or until the rice is tender.
Stir in the milk and half of the cheese until melted and creamy.
Sprinkle the remaining cheese on top and transfer to the oven.
Bake at 375°F (190°C) for about 10 minutes, or until the cheese is bubbly and golden.
Serve
Serve it straight from the pan, scooping out generous portions. Perfect for a weeknight dinner with a side salad or just on its own!
