Step-by-step instructions
Preparatory phase
Preheat your oven to 400°F (200°C). Line a large baking sheet with baking paper and lightly grease with olive oil. Prepare all the vegetables: wash, peel and cut as indicated in the list of ingredients.
Step 1: Prepare the potatoes
Wash and brush the potatoes thoroughly, then cut into even slices about 2 cm thick. Using a fork, prick each slice several times on each side so that it does not burst during cooking and the seasoning can penetrate more easily.
Step 2: Create the egg shell
In a large bowl, whisk together the eggs, salt, black pepper, milk, flour, and paprika until smooth. This dough gives the potato slices a golden and crispy exterior, while keeping the inside soft and melting.
Step 3: Brush the potato slices with it
Dip each potato slice in the egg mixture, making sure all surfaces are thoroughly covered. Drain the excess before placing the slices in a large skillet with hot olive oil.
Step 4: Fry the potato slices in the pan
Heat the olive oil in a large skillet over medium-high heat. Arrange the breaded potato slices in the pan without overcrowding and cook for 4 to 5 minutes until the bottom is golden brown and crispy. Gently flip with a spatula and continue cooking until both sides are golden brown, 3 to 4 minutes.

Step 5: Transfer and Bake
Place the potato slices fried in the pan on the prepared tray and arrange in a single layer. Bake for 15 to 20 minutes until the potatoes are tender when pierced with a fork and cooked through.
Step 6: Season and cook the chicken
While the potatoes are baking, season the diced chicken with dried garlic powder, paprika powder, salt and black pepper. Heat a tablespoon of olive oil in the same pan and cook the chicken for 6-8 minutes until golden brown and done.
Step 7: Stir-fry the vegetables
Add the diced onion to the pan with the chicken and cook for 2-3 minutes until tender. Add the minced garlic and cook for another minute until fragrant. Add the sliced mushrooms and cook for 4-5 minutes until they release their moisture and turn golden brown.
Step 8: Complete the Filling
Add the diced peppers and sliced leeks to the pan. Cook for 3-4 minutes until the vegetables are tender-crispy. Season with additional salt and pepper. Remove from heat and stir in the chopped spring onions.
Step 9: Assemble the loaded potato slices
Remove the baked potato slices from the oven. Generously top each golden potato slice with the chicken and vegetable mixture, spreading evenly over the surface of each slice.
Step 10: Add cheese and finish baking
Sprinkle the grated cheese evenly over each topped potato slice. Return to the oven and bake for 10-12 minutes, until the cheese is melted, bubbly, and slightly golden brown.
Step 11: Garnish and serve
Remove from the oven and let cool for 2-3 minutes. Garnish with more chopped spring onions and a pinch of paprika powder. Serve hot immediately and the cheese is still melted.
