Ever had one of those nights where you just want dessert but can’t deal with complicated recipes? I totally had that moment last week when I opened my fridge and found some ripe peaches staring back at me. I thought, “I’ll just cut ‘em up and serve them with ice cream.” But then I remembered I had some oats and honey too. So, I decided to take it a step further and make a baked peach melba. It turned out to be the easiest, most comforting dessert ever. Plus, I accidentally forgot to add the vanilla, but you know what? It still tasted amazing!
