How to Make It
Preheat your oven to 400°F (200°C).
Place the chicken thighs in a baking dish.
Drizzle with olive oil and sprinkle with Italian seasoning, salt, and pepper.
Add the mixed vegetables around the chicken.
Bake for 25 minutes, then remove from the oven.
Sprinkle shredded cheese over the chicken and veggies, then return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
Serve
This dish is best served straight from the pan. Just scoop out the cheesy chicken and veggies with a spoon and enjoy the delicious sauce that pools at the bottom!
