Ever had one of those days where you just want comfort food but can’t deal with the hassle of cooking? Yep, I’ve been there! I decided to whip up something easy, but I totally spaced on adding the garlic at first. Let’s just say, it was a bit bland until I added it halfway through cooking. But, oh boy, did that turn it around!
Ingredients
12 ounces pasta (like penne or fusilli)
1 can (14 ounces) diced tomatoes
2 cups vegetable broth
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried basil
Salt and pepper to taste
How to Make It
Heat olive oil in a large pan over medium heat.
Add garlic and sauté for 1 minute.
Stir in diced tomatoes, vegetable broth, and pasta.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Once pasta is cooked, stir in heavy cream and Parmesan cheese.
Add dried basil, salt, and pepper. Stir until creamy.
Serve
Serve hot, right from the pan, and enjoy every cheesy, creamy bite!
