How to Make It
Preheat your oven to 350°F (175°C) and grease a baking dish.
In a bowl, mix the diced peaches with lemon juice and set aside.
In another bowl, combine flour, oats, brown sugar, baking powder, cinnamon, and salt.
Pour in the melted butter and vanilla extract, mixing until crumbly.
Press half of the mixture into the bottom of the baking dish.
Spread the peach mixture over the crust evenly.
Sprinkle the remaining crumb mixture on top.
Bake for about 30-35 minutes until golden brown.
