Ever have one of those days where you just want comfort food but can’t bear the thought of a long cooking session? I had one last week. I was so tired after work that I almost decided on takeout, but then I remembered a super easy pasta dish I had seen online. I thought, ‘How hard can it be?’ Well, I nearly burned it because I got distracted scrolling through my texts while waiting for the water to boil. Thankfully, it turned out okay, and I didn’t have to spend hours in the kitchen!
This one-pan cheesy tomato basil pasta is not only quick but also indulgently creamy and packed with flavor. It’s the kind of dish that makes you feel like you’ve done something special without the fuss. And the best part? Cleanup is a breeze since everything cooks in one pan. Seriously, it’s a weeknight lifesaver. Just toss in your ingredients, let it simmer, and you’re all set!
Trust me, you’ll want to make this tonight. It’s perfect for those lazy evenings when all you want is something cheesy and satisfying while binge-watching your favorite show. Get ready for a comforting bowl of pasta goodness!
Ingredients
8 oz pasta (any shape you like)
2 cups cherry tomatoes, halved
1 cup vegetable broth
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt and pepper to taste
How to Make It
In a large pan, combine the pasta, cherry tomatoes, vegetable broth, and heavy cream.
Bring to a boil over medium heat, stirring occasionally.
Once boiling, reduce heat and let it simmer until the pasta is cooked and the sauce thickens, about 10-12 minutes.
Stir in the mozzarella and Parmesan cheese until melted and creamy.
Add the fresh basil and season with salt and pepper to taste.
Serve
Serve it hot straight from the pan for a cozy dinner.
