Ingredients

1 cup uncooked rice

2 cups chicken broth

1 lb chicken breast, diced

1 cup shredded cheese (like cheddar)

1 cup frozen peas

1 onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

How to Make It

Heat olive oil in a large pan over medium heat.

Add diced onion and cook until soft.

Add minced garlic and cook for another minute.

Stir in diced chicken and season with salt and pepper.

Cook until chicken is no longer pink.

Add rice and chicken broth, then bring to a boil.

Reduce heat, cover, and simmer for 15 minutes.

Stir in frozen peas and cheese, mix well.

Cover and let it sit for 5 minutes until cheese is melted.

Serve
