One- Pan Cheesy Szpinak i makaron pomidorowy

Ever had one of those days where you just want comfort food but can’t bear the thought of a big mess in the kitchen? Yeah, me too. I remember the last time I tried to make a fancy pasta dish; I ended up burning the garlic and had to start all over again. Total bummer.

Ingredients

8 ounces of pasta (any shape you like).

1 can (15 ounces) of diced tomatoes.

2 cups of fresh spinach.

1 cup of shredded mozzarella cheese.

2 cups of vegetable broth.

1 teaspoon of Italian seasoning.

Salt and pepper to taste.

1 tablespoon of olive oil.

1 clove of garlic, minced.

How to Make It

In a large pan, heat the olive oil over medium heat.

Add the minced garlic and sauté for about 30 seconds until fragrant.

Pour in the diced tomatoes and vegetable broth, then stir in the pasta and Italian seasoning.

Bring to a boil, then reduce heat and cover. Let it simmer for 10-12 minutes, stirring occasionally.

Once the pasta is al dente, add the spinach and half of the mozzarella cheese. Stir until the cheese is melted.

Top with the remaining mozzarella cheese and cover for a few minutes until melted.

Serve

Serve it straight from the pan, and don’t forget to dig in with a big forkful! It’s melty, cheesy, and so comforting!
