I found myself staring at a box of pasta and a wilting bag of spinach last week, feeling a bit uninspired. I almost considered ordering takeout, but then I remembered a simple trick: one-pan meals!
Ingredients
8 oz pasta (any shape you like)
2 cups fresh spinach
1 cup crumbled feta cheese
2 garlic cloves, minced
4 cups water
1 tablespoon olive oil
Salt and pepper to taste
How to Make It
In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Add pasta and water to the pan. Season with salt and pepper.
Bring to a boil, then reduce heat and let simmer for about 10 minutes, or until pasta is cooked.
Stir in the fresh spinach and crumbled feta. Cook until spinach wilts and cheese melts.
Serve
Serve it warm, right from the pan! It’s creamy, cheesy, and so satisfying.
