Some nights just call for a cozy meal with minimal effort, right? I remember one time I was so tired after a long day that I almost forgot to add the garlic to my pasta. Spoiler alert: it was bland, and I was left wishing I’d paid attention! But then I stumbled upon this creamy tomato basil pasta recipe that changed my weeknight dinners for good.
Ingredients
8 ounces of pasta (any type you like)
1 can (14.5 ounces) of diced tomatoes
1 cup of vegetable broth
1 cup of heavy cream
1 teaspoon of garlic powder
1 teaspoon of dried basil
Salt and pepper, to taste
Fresh basil leaves, for garnish
How to Make It
In a large pan, combine the pasta, diced tomatoes, vegetable broth, and garlic powder.
Bring to a boil over medium heat, then reduce to a simmer.
Cook for about 10 minutes, stirring occasionally, until the pasta is tender.
Stir in the heavy cream and dried basil. Season with salt and pepper.
Cook for another 2-3 minutes until creamy.
Serve hot, topped with fresh basil leaves.
Serve
This creamy pasta is best enjoyed straight from the pan, with a sprinkle of extra basil on top.
