Have you ever had one of those weeknights where you just want something comforting but don’t have the energy to put in a ton of effort? I was definitely feeling that way the other day. I decided to whip up something easy, but I almost ruined it by forgetting to preheat the oven! I was halfway through mixing everything when I realized my mistake. Thankfully, it turned out just fine after all!
Ingredients
2 chicken breasts, diced
2 cups broccoli florets
1 cup uncooked rice
1 can cream of chicken soup
1 cup shredded cheese (cheddar or your choice)
1 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
How to Make It
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the diced chicken, broccoli, uncooked rice, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
Transfer the mixture into a baking dish and spread it evenly.
Top with shredded cheese.
Bake for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
Serve
Serve it straight from the pan, and enjoy the cheesy, comforting goodness!
