We’ve all had those nights when the fridge is looking a little bare and we just want something comforting without putting in too much effort. I was totally ready to whip up a fancy dinner when I realized I had only chicken and some sad broccoli left in the fridge. Instead of ordering takeout, I decided to throw together a quick one-pan bake. Let me tell you, it was a game-changer!
Ingredients
1 pound chicken breasts, cut into bite-sized pieces.
2 cups broccoli florets.
1 cup shredded cheddar cheese.
1 teaspoon garlic powder.
1 teaspoon onion powder.
Salt and pepper to taste.
1 tablespoon olive oil.
1/2 cup milk.
1 cup rice (uncooked).
2 cups chicken broth.
How to Make It
Preheat your oven to 400°F (200°C).
In a large oven-safe pan, heat olive oil over medium heat.
Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook until browned, about 5 minutes.
Add the broccoli, rice, milk, and chicken broth to the pan. Stir everything together.
Top the mixture with shredded cheddar cheese.
Bake in the oven for 20 minutes or until the cheese is bubbly and the chicken is cooked through.
Serve
Serve it straight from the pan for a cozy, no-fuss dinner. Everyone will love digging in!
