So, the other night, I was totally wiped out after a long day. I knew I needed something warm and cheesy to bring me to life, but I didn’t want to spend hours in the kitchen. I had some chicken and broccoli lying around, so I thought, why not throw it all together? I made a rookie mistake—I forgot to check if I had enough cheese, and let me tell you, it was a sad moment when I opened the fridge and saw that I was down to one sad little cup! But, I went ahead anyway, and it still turned out delicious!

Ingredients

2 cups of broccoli florets

1 pound of chicken breast, cut into bite-sized pieces

1 cup of shredded cheese (cheddar works great)

1 cup of cooked rice (or quinoa)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

½ cup of chicken broth

½ teaspoon Italian seasoning (optional)

How to Make It

Preheat your oven to 400°F (200°C).

In a large oven-safe pan, heat the olive oil over medium heat.

Add the chicken pieces, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned.

Stir in the broccoli and cooked rice, mixing everything well.

Pour the chicken broth over the mixture, then sprinkle the shredded cheese on top.

If using, sprinkle the Italian seasoning over the cheese.

Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.

Serve
