I wanted something comforting, something cheesy, and something I could whip up in a flash. So, I decided to make a one-pan chicken and rice dish.
Ingredients
1 pound of chicken thighs, cut into bite-sized pieces.
1 cup of rice, uncooked.
2 cups of chicken broth.
1 cup of shredded cheese (cheddar or mozzarella).
1 onion, diced.
2 cloves of garlic, minced.
1 teaspoon of paprika.
Salt and pepper to taste.
1 tablespoon of olive oil.
How to Make It
Heat olive oil in a large pan over medium heat.
Add diced onion and minced garlic, sauté until fragrant.
Add the chicken pieces, season with salt, pepper, and paprika, and cook until browned.
Stir in the rice and chicken broth, bringing it to a boil.
Reduce heat, cover, and let simmer until rice is cooked and liquid is absorbed.
Sprinkle cheese on top and cover until melted.
Serve
Enjoy it straight from the pan, scooping it out with a spoon. Perfect for a cozy family dinner!
