How to Make It
Preheat your oven to 400°F (200°C).
In a skillet, heat olive oil over medium heat.
Season the chicken thighs with garlic powder, paprika, salt, and pepper, then add them to the skillet.
Cook the chicken for about 5 minutes until browned, then add the mixed vegetables to the skillet.
Stir everything together and transfer the skillet to the oven.
Bake for 25 minutes, then sprinkle cheese on top and bake for an additional 5 minutes until melted.
