You know those nights when you’re just too tired to really cook? I had one of those last week. I opened the fridge, and all I saw were some sad veggies and half a block of cheese. I thought about ordering takeout but then remembered I had pasta. So, I thought, why not just throw everything into one pan and see what happens?
The first time I tried this, I forgot to add enough water and ended up with a pasta brick. But hey, that’s how you learn, right? The next round was a game-changer. A bit of water, a dash of seasoning, and it was the perfect cheesy, gooey comfort food I needed after a long day.
Ingredients
8 ounces of pasta (any shape)
2 cups of water
1 cup of diced tomatoes (canned or fresh)
1 cup of chopped vegetables (like bell peppers or spinach)
1 teaspoon of garlic powder
1 teaspoon of Italian seasoning
1 cup of shredded cheese (mozzarella or cheddar)
Salt and pepper to taste
How to Make It
Preheat your oven to 400°F (200°C).
In a large oven-safe pan, combine the pasta, water, diced tomatoes, chopped vegetables, garlic powder, and Italian seasoning.
Stir everything together and season with salt and pepper.
Bring to a boil over medium heat, then cover and reduce the heat to low. Cook for about 10 minutes.
Remove the lid, stir in half of the cheese, and sprinkle the rest on top.
Transfer the pan to the oven and bake for 15-20 minutes, until the cheese is bubbly and golden.
Serve
Serve straight from the pan, spooning generous portions onto plates. Perfect for a cozy dinner or a quick lunch!
