After a long day, this comforting dish is just what you need.

Ingredients

1 lb boneless chicken breasts, cut into chunks.

1 cup uncooked rice.

2 cups chicken broth (or water, if you’re out!).

1 cup frozen mixed vegetables.

1 cup shredded cheese (cheddar works great!).

1 teaspoon garlic powder.

1 teaspoon onion powder.

1 teaspoon salt.

1/2 teaspoon pepper.

1 tablespoon olive oil.

How to Make It

Preheat your oven to 375°F (190°C).

In a large oven-safe pan, heat olive oil over medium heat.

Add chicken chunks and season with garlic powder, onion powder, salt, and pepper.

Sauté for about 5 minutes until lightly browned.

Add rice, chicken broth, and mixed vegetables.

Stir everything together and bring to a simmer.

Cover the pan with foil and bake for 25 minutes.

Remove from the oven, stir, and sprinkle cheese on top.

Return to the oven uncovered for another 10 minutes until the cheese is melted and bubbly.

Serve
