It’s the perfect lazy weeknight dinner!
Ingredients
8 ounces of pasta (any shape you like)
1 cup frozen mixed vegetables
2 cups vegetable broth
1 cup shredded cheese (cheddar or mozzarella works well)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
How to Make It
In a large pan, heat the olive oil over medium heat.
Add the pasta and pour in the vegetable broth.
Stir in the frozen vegetables, garlic powder, onion powder, salt, and pepper.
Bring to a boil and then reduce to a simmer.
Cover and cook for 10-12 minutes, or until the pasta is tender.
Remove from heat and stir in the shredded cheese until melted.
Serve
Serve it straight from the pan with a sprinkle of extra cheese on top!
