This dish is as easy as it is comforting.
Ingredients
8 ounces of pasta (any shape you like).
1 can (14 ounces) of diced tomatoes.
1 small onion, diced.
2 cloves of garlic, minced.
2 cups of vegetable or chicken broth.
1 teaspoon of Italian seasoning.
Salt and pepper, to taste.
1 cup of shredded mozzarella cheese.
Fresh basil for garnish (optional).
How to Make It
In a large pan, combine the pasta, diced tomatoes, onion, garlic, broth, and Italian seasoning.
Bring it to a boil over medium heat.
Reduce the heat and let it simmer for about 10-12 minutes, stirring occasionally.
Once the pasta is cooked, stir in the mozzarella cheese until melted.
Season with salt and pepper to taste.
Serve
Enjoy it straight from the pan, garnished with fresh basil if you have it!
