Last week, I was totally wiped out after work and craving something cheesy and filling. I thought I’d whip up my usual chicken and rice but ended up burning the rice to a crisp! I was so disappointed, but then I remembered a simple one-pan recipe I had seen online.

With just a few ingredients, I was able to transform my disaster into a cheesy chicken and rice bake that was not only easy but also tasty. The best part? Cleanup was a breeze since everything cooked right in one pan. I love how the cheese got all gooey and melted, making each bite feel like a warm hug.

Ingredients

2 cups of cooked rice

2 chicken breasts, cubed

1 cup of shredded cheese (cheddar or mozzarella)

1 cup of chicken broth

1 cup of frozen mixed vegetables

1 teaspoon of garlic powder

1 teaspoon of onion powder

Salt and pepper to taste

How to Make It

Preheat your oven to 375°F (190°C).

In a large oven-safe skillet, combine the cooked rice, cubed chicken, mixed vegetables, garlic powder, onion powder, salt, and pepper.

Pour the chicken broth over the mixture and stir to combine.

Sprinkle the shredded cheese on top.

Cover with a lid or aluminum foil and bake for 25-30 minutes.

Remove the lid and bake for another 10 minutes until the cheese is bubbly and golden.

Serve

Serve it straight from the pan, scooping out generous portions. It’s perfect for a cozy night in!
