You know those nights when you get home from work, and all you want is something warm and comforting, but you just can’t deal with a million pots and pans? Yeah, I’ve been there too! That’s when I stumbled upon this one-pan cheesy chicken and rice bake that saved my evening.

Ingredients

2 cups of uncooked rice

1 pound of chicken thighs or breasts, cut into pieces

4 cups of chicken broth

1 cup of shredded cheese (cheddar or your favorite)

1 onion, diced

2 cloves of garlic, minced

1 teaspoon of Italian seasoning

Salt and pepper, to taste

1 tablespoon of olive oil

How to Make It

Preheat your oven to 375°F (190°C).

In a large oven-safe pan, heat olive oil over medium heat and sauté the onions until they are soft.

Add the garlic and cook for another minute.

Stir in the uncooked rice and chicken pieces.

Pour in the chicken broth and add Italian seasoning, salt, and pepper. Bring to a simmer.

Once simmering, sprinkle the cheese on top and transfer the pan to the oven.

Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.

Serve
