Ever had one of those days where you just want to throw something together and hope for the best? Yeah, me too. I was completely beat after a long week, and let’s just say, my kitchen skills were not in top form. I started this cheesy chicken and rice bake, but I somehow forgot to add the chicken until halfway through. The good news? It still turned out delicious!
Ingredients
2 cups of uncooked rice
4 cups of chicken broth
2 cups of shredded chicken (cooked)
1 cup of shredded cheese (cheddar or mozzarella)
1 cup of frozen peas
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
1 tablespoon of olive oil
How to Make It
Preheat your oven to 375°F (190°C).
In a large baking dish, combine the uncooked rice, chicken broth, garlic powder, onion powder, salt, and pepper.
Add the cooked chicken, frozen peas, and olive oil to the dish. Stir everything together.
Spread the shredded cheese evenly on top.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
Serve
Serve it hot, straight from the pan. It’s perfect for a cozy family dinner!
