Weeknight dinners just got a lot easier!
Ingredients
1 pound of chicken thighs, boneless and skinless.
1 cup of long-grain rice.
2 cups of chicken broth.
1 cup of shredded cheese (cheddar works great).
1 cup of frozen mixed vegetables.
1 teaspoon of garlic powder.
1 teaspoon of onion powder.
Salt and pepper to taste.
How to Make It
Preheat your oven to 375°F (190°C).
In a large baking dish, combine the rice, chicken broth, garlic powder, onion powder, and salt and pepper.
Place the chicken thighs on top of the rice mixture.
Spread the frozen mixed vegetables over the chicken.
Cover the dish tightly with foil and bake for 30 minutes.
Remove the foil, sprinkle the cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Serve
Serve it straight from the pan for a cozy dinner. Just scoop and enjoy!
