I almost burned the garlic because I got distracted scrolling through my phone! But then I remembered this easy one-pan pasta recipe that saves the day every time.

Ingredients

8 ounces of pasta (any shape you like)

2 cups of baby spinach

1 cup of cherry tomatoes, halved

2 cups of vegetable broth or water

1 cup of shredded mozzarella cheese

1 teaspoon of minced garlic

Salt and pepper to taste

Olive oil for drizzling

How to Make It

In a large pan, add the pasta, spinach, tomatoes, garlic, and broth. Season with salt and pepper.

Bring the mixture to a boil over medium heat.

Reduce heat and let it simmer, stirring occasionally until the pasta is cooked and the liquid is mostly absorbed.

Stir in the mozzarella cheese until melted and creamy.

Serve

Serve it straight from the pan, drizzled with a bit of olive oil and extra cheese on top. Perfect for a cozy dinner!
