Ingredients
1 cup of uncooked rice
2 cups of vegetable or chicken broth
2 cups of fresh broccoli florets
1 cup of shredded cheddar cheese
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
Salt and pepper to taste
1 tablespoon of olive oil
How to Make It
In a large pan, heat olive oil over medium heat.
Add the uncooked rice and stir for a minute.
Pour in the broth, and add broccoli, garlic powder, onion powder, salt, and pepper.
Bring to a boil, then reduce heat and cover.
Simmer for about 15 minutes, or until rice is tender.
Stir in the cheese until melted and creamy.
Serve
Enjoy it straight from the pan, maybe with a side salad!
