After a long day, I needed something comforting and easy to make.
Ingredients
8 oz pasta of your choice.
2 cups fresh spinach.
1 cup ricotta cheese.
2 cloves garlic, minced.
1 cup chicken or vegetable broth.
1/2 cup grated Parmesan cheese.
Salt and pepper to taste.
1 tablespoon olive oil.
Red pepper flakes (optional).
How to Make It
In a large pan, heat olive oil over medium heat.
Add minced garlic and sauté until fragrant.
Stir in the pasta and broth, bringing everything to a boil.
Reduce heat and let simmer until pasta is cooked and liquid is mostly absorbed.
Stir in fresh spinach and ricotta until creamy.
Add Parmesan cheese and mix well.
Season with salt, pepper, and red pepper flakes if using.
Serve
This dish is best enjoyed straight from the pan with a sprinkle of extra cheese on top!
