Ingredients
8 oz spaghetti
1 can diced tomatoes
2 cups vegetable broth
1 cup heavy cream
1 cup fresh basil, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup grated Parmesan cheese
How to Make It
In a large pan, combine the spaghetti, diced tomatoes, vegetable broth, heavy cream, garlic, salt, and pepper.
Bring to a boil, then reduce heat and simmer for about 15 minutes, stirring occasionally.
Once the pasta is cooked, stir in the fresh basil and Parmesan cheese until creamy.
Serve
Serve it straight from the pan, topped with extra cheese and basil if you like.
