Ever had one of those days where you just can’t even? I’ve been there. Last week, I was so tired after work that I forgot to thaw the chicken for dinner. Instead of ordering takeout, I thought, ‘Let’s wing it!’ I grabbed some pasta, a few pantry staples, and my trusty skillet.
In my hazy state, I realized I didn’t have enough broth, so I just used water instead. Spoiler alert: it turned out just fine! The creamy sauce was rich and comforting, and I didn’t have to clean up a million pots.
Now, this creamy one-pan chicken pasta is my go-to for those lazy weeknights. Minimal effort, maximum flavor, and it’s ready in less than 30 minutes. Plus, you can totally impress anyone with how easy it is to whip up!
Ingredients
8 ounces of pasta (any kind)
1 pound of chicken breast, diced
2 tablespoons of olive oil
2 cups of chicken broth (or water)
1 cup of heavy cream
1 cup of grated Parmesan cheese
2 cloves of garlic, minced
Salt and pepper, to taste
How to Make It
In a large skillet, heat the olive oil over medium heat and add the diced chicken. Cook until browned.
Add the minced garlic and cook for an additional minute.
Pour in the chicken broth (or water) and bring to a boil.
Add the pasta and reduce heat to a simmer. Cook until the pasta is al dente.
Stir in the heavy cream and Parmesan cheese, mixing until the sauce is creamy. Season with salt and pepper.
Serve
Serve it hot, straight from the pan, and enjoy the creamy goodness!
