Ever had one of those nights where you just want something comforting, but you can’t deal with a million pots and pans? Yeah, that was me last week. I had a craving for cheesy goodness, but I was also tired after a long day. I decided to throw together this one-pan chicken and broccoli bake, and let me tell you, it was a game-changer!
I almost messed it up by forgetting to preheat the oven, and my chicken was a bit undercooked at first. But after a quick panic moment, I slid it back in, and it turned out perfectly gooey and cheesy. The best part? Minimal cleanup!
Ingredients
1 pound of chicken breast, cubed.
2 cups of broccoli florets.
1 cup of shredded cheese (mozzarella or cheddar).
1 cup of cooked rice.
1 can of cream of chicken soup.
1 teaspoon of garlic powder.
1 teaspoon of onion powder.
Salt and pepper to taste.
1 tablespoon of olive oil.
How to Make It
Preheat your oven to 375°F (190°C).
In a large bowl, mix the chicken, broccoli, cooked rice, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
Drizzle olive oil in a baking dish and pour the mixture into it.
Top with shredded cheese.
Bake for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly.
Serve
Enjoy straight from the baking dish for a cozy meal!
