Ever had one of those days where you just want comfort food, but you don’t want to spend hours in the kitchen? That was me last week. I had a frozen chicken breast staring at me, and I wasn’t sure what to do with it. I thought about making a complicated stir-fry, but by the time I was ready to cook, all I wanted was something cheesy and warm.
So, I decided to throw everything into one pan and see what happened. I might have overcooked the broccoli a bit – it was more ‘soggy’ than ‘crisp’ – but the cheese melted beautifully over the chicken and the flavors came together in a way that made me forget all about my mistake.
This dish is so simple and requires minimal effort. You just mix your ingredients, pop them in the oven, and let it do the work for you. It turned out to be a total win, and I couldn’t wait to share it with friends. Plus, clean-up was a breeze!
Ingredients
1 pound chicken breast, cut into cubes.
2 cups broccoli florets.
1 cup shredded cheddar cheese.
1 cup cooked rice.
1 cup cream of chicken soup.
1 teaspoon garlic powder.
1 teaspoon onion powder.
Salt and pepper to taste.
How to Make It
Preheat your oven to 375°F (190°C).
In a large bowl, combine chicken, broccoli, rice, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
Transfer the mixture to a greased baking dish.
Sprinkle the shredded cheddar cheese on top.
Bake for 25-30 minutes, until the chicken is cooked through and the cheese is bubbly.
Serve
Serve warm right from the pan. It’s so cheesy and comforting that you’ll want to dig right in!
