Ever had one of those days where you just want to throw everything in a pan and call it dinner? Yeah, me too. I was exhausted after a long day and almost burned my first attempt of this dish because I forgot to set a timer! I ended up with a crispy layer on top but learned that a little crunch is totally acceptable when it means dinner is done in one go!
Ingredients
2 cups uncooked white rice
4 cups chicken broth
1 pound chicken breasts, diced
1 cup frozen mixed vegetables
2 cups shredded cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 tablespoon olive oil
How to Make It
Preheat your oven to 375°F (190°C).
Heat olive oil in a large oven-safe pan over medium heat.
Add the diced chicken and cook until no longer pink.
Stir in rice, chicken broth, frozen vegetables, garlic powder, onion powder, salt, and pepper.
Bring to a boil, then reduce heat to low and cover.
Simmer for 15 minutes, then remove from heat.
Sprinkle cheese on top and transfer the pan to the oven.
Bake for about 10-15 minutes until the cheese is melted and bubbly.
Serve
Serve right from the pan for a cozy, no-fuss dinner!
