I had a craving for something creamy and cheesy, but I didn’t want to spend hours in the kitchen. I remembered this simple one-pan pasta recipe that I’d messed up once by burning the chicken. This time, I kept a close eye on it, and it turned out perfect!
Ingredients
1 lb chicken breast, diced
2 cups chicken broth
1 cup heavy cream
8 oz penne pasta
2 cups fresh spinach
1 cup shredded mozzarella cheese
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
How to Make It
Heat olive oil in a large pan over medium heat.
Add diced chicken and cook until browned.
Add garlic and sauté for a minute.
Pour in chicken broth and cream, then stir.
Add pasta and bring to a boil.
Reduce heat and simmer until pasta is cooked.
Stir in spinach until wilted.
Mix in mozzarella cheese until melted.
Season with salt and pepper.
Serve
Spoon into bowls and enjoy while it’s hot.
