All I wanted was a comforting meal that wouldn’t make me want to cry while preparing it. I remembered trying to make a complicated pasta dish once and ended up with overcooked pasta that was more glue than al dente.
Ingredients
2 chicken breasts, sliced
2 cups of uncooked pasta
2 cups of chicken broth
1 cup of heavy cream
1 cup of grated Parmesan cheese
2 cloves of garlic, minced
Salt and pepper to taste
Olive oil
How to Make It
Heat olive oil in a large pan over medium heat.
Add the sliced chicken and cook until golden brown.
Remove chicken from the pan and set aside.
In the same pan, add garlic and cook for 1 minute.
Pour in the chicken broth and heavy cream, stirring well.
Add the uncooked pasta, and bring to a simmer.
Cook until the pasta is al dente, about 10-12 minutes.
Return the chicken to the pan and add Parmesan cheese.
Stir until the cheese is melted and the sauce is creamy.
Season with salt and pepper to taste.
Serve
Spoon onto plates directly from the pan, garnished with extra Parmesan if you like. Enjoy immediately!
