Ingredients
2 cups uncooked pasta (penne or fusilli)
1 pound chicken breast, cut into bite-sized pieces
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
How to Make It
Heat olive oil in a large pan over medium heat.
Add chicken pieces and cook until browned.
Add minced garlic and cook for another minute.
Pour in the heavy cream and bring to a simmer.
Add uncooked pasta and stir well.
Cover the pan and let it cook for about 10 minutes, stirring occasionally.
Add spinach and Parmesan cheese.
Stir until spinach wilts and cheese melts into a creamy sauce.
Season with salt and pepper to taste.
Serve
Serve hot, straight from the pan, with extra Parmesan on top if desired.
