You know those nights when you’re just done with everything and need something comforting? That was me last week. I craved something hearty but didn’t want to spend ages in the kitchen. I remembered an old recipe for creamy chicken, but the last time I tried, I made it too watery. This time, I discovered a shortcut. Just one pan, some chicken, a can of tomato soup, and a few other basics. It turned out creamy and perfect. The best part? Only one pan to clean up after.
Ingredients
1 lb chicken breasts, sliced
1 can (10 oz) tomato soup
1 cup heavy cream
1 onion, sliced
2 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
Salt and pepper to taste
How to Make It
Heat olive oil in a large pan over medium heat.
Add sliced onion and garlic, sauté until soft.
Add chicken slices, cook until browned.
Stir in tomato soup and heavy cream.
Sprinkle in oregano, salt, and pepper.
Simmer on low for 15 minutes, stirring occasionally.
Serve
Spoon over rice or pasta and enjoy warm.
