Once I got the hang of it, this dish became a weeknight favorite. A quick, comforting meal that looks and tastes like you’ve spent ages on it.
Ingredients
2 cups uncooked pasta (like penne or fettuccine)
2 cups chicken breast, sliced into strips
1 cup grated Parmesan cheese
2 cups milk
1 cup chicken broth
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
How to Make It
Heat olive oil in a large pan over medium heat.
Add chicken strips and cook until browned.
Add minced garlic and sauté for a minute.
Pour in the chicken broth and milk, then stir.
Add the uncooked pasta to the pan.
Bring to a simmer, stirring occasionally, until pasta is cooked.
Stir in the grated Parmesan cheese until melted and creamy.
Season with salt and pepper to taste.
Serve
Serve hot, right from the pan. Enjoy with a sprinkle of extra Parmesan if you like.
