So last night, I was completely drained after a long day. You know that feeling when you’re starving but can’t even imagine putting in more than minimal effort? Yep, that was me. I craved something comforting and cheesy, but the thought of complicated recipes made me want to crawl into bed with a bag of chips instead.
Ingredients
2 cups uncooked pasta (penne or fusilli)
1 lb chicken breast, cut into bite-sized pieces
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp olive oil
Salt and pepper to taste
How to Make It
Heat olive oil in a large pan over medium heat.
Add chicken pieces and minced garlic. Cook until the chicken is browned.
Pour in the chicken broth and heavy cream. Stir to combine.
Add the uncooked pasta. Stir again.
Bring to a simmer, then cover and let cook for 15 minutes, stirring occasionally.
Once pasta is cooked, stir in the Parmesan cheese until melted and creamy.
Season with salt and pepper to taste.
Serve
Spoon onto plates and enjoy warm. Perfect for a quick, cozy dinner.
