After a hectic day, I wanted something delicious without the hassle. This cheesy chicken skillet was the answer.
Ingredients
2 boneless, skinless chicken breasts
1 cup shredded mozzarella cheese
1 can diced tomatoes
1 teaspoon dried Italian herbs
1/2 cup sliced olives
1 tablespoon olive oil
Salt and pepper
How to Make It
Heat olive oil in a skillet over medium heat.
Add chicken breasts to the skillet. Season with salt and pepper.
Cook chicken for about 5 minutes on each side.
Pour diced tomatoes over the chicken.
Sprinkle Italian herbs over the tomatoes.
Add sliced olives on top.
Sprinkle mozzarella cheese evenly over everything.
Reduce heat to low, cover the skillet, and let it simmer for 15 minutes.
Serve
Scoop the cheesy chicken and sauce onto plates and enjoy with some crusty bread.
